Street food sales constitute a job opportunity in countries with emerging economies. Due to the conditions in which these foods are prepared and sold, they are a potential source of disease, becoming a public health problem. Research is necessary in countries with this problem. This work collects and analyzes the publications on this topic. The articles were obtained from Scopus, PubMed and Google Scholar digital databases, using keywords. After applying the corresponding filters, 35 articles were used, which showed results of microbial count and percentages of compliance with correct hygiene practices. It was observed that food with a higher percentage of the permitted levels of E. coli, the main indicator associated with fecal contamination is found in Ghana, Nigeria, Peru and Venezuela; no publication shows 100% of compliance with the parameters of good hygiene practices. These results show the urgent need to raise awareness among all those involved in the selling chain (sellers, consumers, control agencies), about the pertinent and timely action to improve the conditions of street food sales.
