<self-uri xlink:href="http://scielo.senescyt.gob.ec/scielo.php?script=sci_arttext&amp;pid=S1390-01292017000100019&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.senescyt.gob.ec/scielo.php?script=sci_abstract&amp;pid=S1390-01292017000100019&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.senescyt.gob.ec/scielo.php?script=sci_pdf&amp;pid=S1390-01292017000100019&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen: Se estudió el efecto de la radiación UV-C sobre la flora nativa y la capacidad antioxidante de la mezcla para té compuesto por toronjil (Melissa officinalis), ortiga (Urtica dioica), perejil (Petroselinum sativum) y paico (Chenopodium ambrosioides) de la zona andina de Cotacachi. La mezcla fue analizada en dos lotes: uno en un momento inicial y otro luego de 5 meses de almacenamiento a temperatura ambiente, estos fueron tratados con dosis de radiación UV-C de 2,3; 4,1 y 6,5 kJ/m2. Se realizaron análisis microbiológicos de aerobios mesófilos totales, coliformes totales, mohos y levaduras. Se analizó la capacidad antioxidante con el método ABTS, y el contenido de polifenoles totales con el método de Folin-Ciocalteu. Las muestras tratadas mostraron un descenso de aerobios totales, mohos y levaduras, sin embargo, en coliformes totales hubo un incremento. La radiación UV-C presentó un efecto benéfico en el contenido de polifenoles tanto para la mezcla de hierbas secas como para la bebida de té elaborado. En cuanto a la capacidad antioxidante hubo un efecto negativo en la mezcla de hierbas secas, y en el té no se presentaron diferencias estadísticas. El tiempo de almacenamiento produjo una reducción de la capacidad antioxidante y el contenido de polifenoles de la mezcla de hierbas secas y del té elaborado.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract: It was studied the effect of UV-C radiation on the native flora and antioxidant capacity of the mixture for tea made up lemon balm (Melissa officinalis), nettle (Urtica dioica), parsley (Petroselinum sativum) and paico (Chenopodium ambrosioides) of the Andean zone of Cotacachi. The mixture was analyzed in two batches: one at an initial stage and another after 5 months storage at room temperature, these were treated with doses of UV-C of 2,3; 4,1 and 6,5 kJ / m2. Microbiological analysis of total aerobic mesophilic bacteria, total coliforms, molds and yeasts were performed. Antioxidant capacity with the ABTS method was analyzed, and the total polyphenol content with the Folin-Ciocalteu. The treated samples exhibited a decrease in total aerobes, molds and yeasts; however, there was an increase of total coliforms. The UV-C radiation showed a beneficial effect on the polyphenol content for both the mixture of dried herbs and the brewed tea. As the antioxidant capacity, there was a negative effect on the mixture of dried herbs, and drink tea showed no statistical difference. The storage time provoked a reduction in the antioxidant capacity and the polyphenol content of the mixture of dried herbs and brewed tea.]]></p></abstract>
