The aim of this research is to publicize the offer of traditional gastronomy that is offered in the markets of Quito as part of the folklore within the classification of tourist resources. For which a documentary research on the markets was developed, as well as the inventory of the preparations that are offered in them, The methodology applied was descriptive exploratory responding to a mixed approach. Using primary and secondary research sources that allowed deepening theorical aspects. The observation was the technique used and subsequent recording of the information obtained in the markets visited. The simple studied was non - probabilistic, that is, it depends on the authors decision and worked with the four representative markets of the city located in the north central sector of the city, which are crowded of the consumption of food and beverages, standing out of the rest due to its location and number of visitors. Additionally the investigation was divided into three stages that allowed an analysis of the dishes and beverages with the greatest quantity on offer and wich in turn can be considered a resource for the construction of improvement of existing tourism products.
