LEON GARCIA, Melisa Annabel; ROSILLO SUAREZ, Azucena Nancy y ZAMBRANO ACOSTA, Jimmy Manuel. Strategy for the development of competitiveness in small and medium-sized enterprises (PYMES) of the gastronomic, Portoviejo-Ecuador. Revista San Gregorio [online]. 2020, n.40, pp.33-47. ISSN 2528-7907. https://doi.org/10.36097/rsan.v1i40.1378.g805.
The objective of this investigation, is to propose strategies for the development of competitiveness in the Small and Medium Enterprises (SMEs) of the gastronomic sector of the Primero de Mayo neighborhood, in Portoviejo County. For its fulfillment, it was necessary to carry out the theoretical analysis and diagnosis of the competitiveness process. The methodology was prospective with an observational, qualitative and quantitative approach; the bibliographic method was used to support the study variables. The applied technique was the survey of the proprietary managers considered as an observation unit, and an interview with a teacher from the Faculty of Administrative and Economic Sciences of the Technical University of Manabí. The population that was delimited as the unit of analysis was the owner managers of small and medium-sized companies in a number of 36, which were considered as a sample. From the competitiveness percentages obtained, it is concluded that the growth of some pillars in the development of this gastronomic sector are oriented to the design of strategies. Despite the fact that most of them know about customer service, they should be focused on the process of change of the Productive Matrix established as legal regulations of the Ecuadorian Government; therefore, they must prepare themselves in new strategies to improve the competitiveness and profitability of their business.
