The gastronomy is a vitally important activity in the provinces of the coastal region, as it is highly demanded by the tourists that visit the beaches of the littoral. However, there are loopholes that need to be converted in opportunities of improvement, which motivated the realization of the present study, which has as its objective: to determine the behavior of the management of the merchandises in the restaurants of the Ecuatorian coast. The research is conciliated in 2 steps: Identification of the factors that influence the management of the merchandises by means of the Delphi method implemented with previously selected experts, and the analysis of this in a sample of restaurants, through a checklist using the observation as empirical method of investigation. The results were validated statistical by the SPSS program version 22 and showed that the management of merchandises in all restaurants presents an unfavorable situation.
