The fruit and vegetable wholesale market constitute a relevant link in the AMBA's marketing food network, providing logistical support that allows large volumes of products to be absorbed and located quickly. The objective of this work is to understand the dynamics of solid waste generation using the Pilar wholesale market as a case study. The research included the characterization of said market, the analysis of its dynamics and the quantification of waste generation. At the wholesale market level, 271 containers were removed in one year, which is equivalent to approximately 675 tons of waste, of which 92 % is vegetable waste. Most of the waste comes from the vegetable stalls and 68 % of the discards is product that can be recovered as food suitable for human consumption. The qualitative and quantitative information obtained in this study made it possible to identify critical points in the dynamics of waste generation and is essential for the design of strategies to minimize losses, recover food suitable for human consumption, and reuse organic waste.
