Abstract

This work analyzes the variability of a water demineralization process, by ion exchange, for the soft drinks production, and the influence of the two quality variables in the process: hardness and alkalinity, on the final quality of the products. The objective of the research focuses on reducing the variability of the process, increasing its capacity and establishing an improvement plan that is sustainable over time. For this, a field work was carried out, with the quality cycle and design of experiments, PHVA methodology. The initial diagnosis of the process was obtained, the problem of the two critical quality variables was established and it was concluded that the process was class 4: not adequate, stable, incapable, highly variable and in need of serious changes. After the improvement, the process behaves as class 1: adequate, stable, capable and with low variability. The results obtained in the water demineralization process are maintained over time; controls were implemented by means of the XR type control letters.
