This research aims to develop a wastewater treatment process for a sausage industry, which is based on a grease and oil interceptor, an air flotation system and a biofilter or worm filter, so that these discharges comply with the regulations for liquid discharges to the sewage system of the city of Quito, Resolution N002-SA-2014. In the characterization of raw wastewater from the sausage industry, it was identified that the limits for BOD5, COD, suspended solids, oils, and fats are not met, with values of 2314 mg/L; 3046 mg/L; 3131 mg/L and 2159 mg/L, respectively. For the design of the treatment system, the best operating conditions were considered, which are: a residence time of 5,2 min in the grease trap, for a removal efficiency of 97 %, 14 hours of retention in the worm filter for an efficiency of 86 % and 20 minutes in the aeration flotation system with an efficiency of 89 %. The dimensions of the grease trap were 0,3 meters long and 1.4 meters high with a 0.06 kW centrifugal pump; 2,7 meters of total height among the three worm filters; a bed 1,5 meters high; 5,5 meters wide and 6,5 meters long; a storage tank 2,1 meters high and 2,1 meters circular radius with a 0.18 kW pump. There is also a square-shaped cell for the air flotation system, measuring 0,7 meters long; 1,4 meters high and a mechanical agitator with inclined blades with a power of 0,19 kW.
