Garlic have an antioxidant and antimicrobial activity and according to recent reports, could also be associated with anti-cancer effects. These features make the garlic ingredient extremely usefu for the development of functional products; however its characteristic odor limits its use. This study evaluated the potential possibility to mask developing compounds in garlic odor using controlled release systems, recently reported in various food applications. Using an Electronic Nose, built by the electronics department of the Polytechnic University of Valencia, samples of one of the most important organosulfur compounds in the development of the smell of garlic, diallyl disulfide were detected. This compound was encapsulated in a microparticle support mesoporous silica (MCM41), which in turn was coated with two different molecular systems. These systems act as gateways to control the release of the compound loaded in the pores. In this work, these systems were proposed as potential odor masking devices diallyl disulfide encapsulated. The results obtained by the electronic nose were analyzed by multivariate statistical development of principal components (PCA). Interesting differences between the systems were found to which any door and molecular systems were not anchored. Additionally the coated samples were grouped within the white sample, containing no compound of pore molecular systems or on its surface. Therefore these white samples had no noticeable characteristic odor for the team and reveals the possible masking effect produced using molecular systems.
