The research objective was to identify the innovations implemented in micro-enterprises in the gastronomic sector of Itapúa (Paraguay) because of the COVID-19 pandemic. Data from 41 microenterprises were collected through a questionnaire, and a correlational statistical analysis was performed, which showed that the orientation towards a culture of innovation based on process, product, marketing, and technology as strategies made it possible to face the limitations caused by the COVID-19 pandemic, achieving faster adaptation processes. The results have theoretical implications in understanding innovation as a strategy to overcome adverse situations in the gastronomic sector and provide guidance for its application to these companies to improve their adaptation and development processes in the face of changing conditions in providing their services.
